Orange Kiwi Salad



This is my new favorite salad!  It's so simple as well:

Your favorite greens
Fresh Kiwi
Mandarin Oranges
Crasins
Red Onion
a little Mozzarella cheese (optional)

top it off with either home made (or my favorite store bought) poppy seed dressing.

I promise it is absolutely amazing!!

Fresh Peach Pie


I absolutely love peaches. Pie just happens to be my favorite type of dessert. Nothing beats a delicious fresh peach pie topped with vanilla ice cream!

Ingredients

  • 1 (15 ounce) package pastry for a 9 inch double crust pie
  • 1 egg, beaten
  • 5 cups sliced peeled peaches
  • 2 tablespoons lemon juice
  • 1/2 cup all-purpose flour
  • 1 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons butter

Directions

  1. Preheat the oven to 450 degrees F (220 degrees C).
  2. Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
  3. Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
  4. Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

Cherry-Almond Granola


We love granola, and this recipe is great!

1 cup brown sugar
½ cup honey
⅓ cup frozen apple juice concentrate
2 tablespoons oil
3 teaspoons almond extract
6 cups rolled oats
1 ½ cups dried cherries (or dried cranberries)
1 cup slivered almonds

Cook the brown sugar, honey, apple juice, and oil in a small saucepan over medium heat just until sugar is dissolved. Mix in almond extract and remove from heat. Meanwhile, in a large bowl, mix oats, cherries, and almonds. Drizzle sugar mixture over oat mixture, stirring well to coat evenly. Spread into even layers on two cookie sheets and bake at 375° for 15-20 min, stirring occasionally, until golden brown. This granola is really good served over vanilla yogurt! Makes about 3 quarts.

Crepes


This is a basic crepe recipe. My husband, Jesse, loves crepes, and we sometimes make this as a light dinner, or even dessert.

1 cup flour
2 eggs
½ cup milk
½ cup water
¼ teaspoon salt
2 tablespoons melted butter

Mix all ingredients until smooth. Pour ¼ cup of the mixture into a crepe pan (or small frying pan), swirling to coat. Cook each side over medium heat until golden brown. Fill or top with fruit! Makes 8-10 crepes.
