Seriously The World's Best Banana Muffins!
Alright, so here is the link to the original recipe. It's from the food network. I made some changes though to make them a little healthier. I was just randomly looking for a recipe because I had some bananas that needed to be used, and seriously have eaten like 5 of these already tonight! They don't look like much, but they are seriously some of the best muffin's I've ever tasted. So I had to share :)
P.S. Be forewarned, this recipe makes a lot!
Directions:
Preheat oven to 325 degrees
Line a muffin pan with paper liners
Mix the following in a large bowl:
1.5 cups all purpose flour
1.5 cups whole wheat flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp all spice
In a separate bowl beat together the following ingredients:
1 cup refined sugar
1 cup raw sugar
1/2 cup oil
3/4 cup apple sauce
2 eggs
1 Tbs vanilla
Stir in
2-3 mashed very ripe bananas
Stir in the dry ingredients just until blended. Put into your muffin cups and bake for 25 min.
DELICIOUS!! (I'm guessing with some cream cheese frosting, these would also be amazing)

Crunchy Peanut-butter Wraps
This is a yummy snack or light lunch that I found is yummy, and there are many different ways you could do this!
Flour tortillas (or some other type of wrap)
Peanut butter
Honey
Chopped apples
Granola
Spread peanut butter on a flour tortilla and top with whatever other ingredients you want! It's really that simple! It is also fun to wrap them tightly and slice them to make little pinwheels.

Cherry-Almond Granola

We love granola, and this recipe is great!
1 cup brown sugar
½ cup honey
⅓ cup frozen apple juice concentrate
2 tablespoons oil
3 teaspoons almond extract
6 cups rolled oats
1 ½ cups dried cherries (or dried cranberries)
1 cup slivered almonds
Cook the brown sugar, honey, apple juice, and oil in a small saucepan over medium heat just until sugar is dissolved. Mix in almond extract and remove from heat. Meanwhile, in a large bowl, mix oats, cherries, and almonds. Drizzle sugar mixture over oat mixture, stirring well to coat evenly. Spread into even layers on two cookie sheets and bake at 375° for 15-20 min, stirring occasionally, until golden brown. This granola is really good served over vanilla yogurt! Makes about 3 quarts.
