Another very easy meal! I made this just last night and forgot to take a picture...sorry! It was good though! The recipe was a little plain I thought, so next time I make it I will probably add broccoli and roasted garlic.
4 boneless, skinless chicken breasts, cut into strips
4 medium carrots, julienned
1 medium sweet onion, julienned
3 tablespoons olive oil, divided
1/2 cup soy sauce
1/4 cup brown sugar
Hot cooked rice
Toasted sesame seeds (optional)
Sliced green onions (optional)
In a large skillet or wok, stir-fry chicken in 2 tablespoons oil until no longer pink. remove chicken from pan, but add vegetables and 1 tablespoon oil. Stir-fry veggies until they are tender. In a separate bowl, mix together soy sauce and brown sugar. Add sauce to skillet with veggies and bring to a boil. Add chicken back in. Boil everything together for about 5 min, until the sauce is slightly thickened. Serve over hot-cooked rice. Top with sesame seeds and green onions if you want!
