I totally made up this recipe this afternoon when I wanted to use up leftover wrappers from making spring rolls, and they turned out pretty yummy! I can't think of a good name for this recipe, so suggestions are welcome!
8 egg roll or won-ton wrappers
3 large apples
2 tsp cinnamon
1/4 Cup brown sugar
1/2 tsp lemon juice
Slice apples very thinly (I used the slicing add-on to my salad shooter). Mix all ingredients in a large bowl. Place a large spoonful of apple mixture in each wrapper and wrap like a burrito. Brush egg whites on the edge of the wrap so it will stick. Place filled turnovers on a cookie sheet and bake at 375 for 15 min. I served them warm with whipped cream and caramel syrup!
