So I’ve been meaning to contribute to this blog for a LONG time. But it’s hard to find the time and I never remember to take pictures of what I make, but here it goes . . . I’m going to be better =)
Easiest and BEST dessert EVER! Warning: Not for chocolate lovers. You WILL become addicted.
Chocolate Cream Pie
Pie:
½ cup milk
1 ½ cups mini marshmallows (16 large ones)
1 bar milk chocolate (1 cup of chocolate chips)
1 cup heavy whipping cream
1 brick of cream cheese (8 oz)
Crust: (next time I’m just going to use a pre-made crust, but this was fine too)
1 cup of your favorite crushed cookies (grahmcrackers, oreos, animal crackers, etc)
¼ cup butter
2 Tbs sugar
Preheat oven to 350o. Put cookies in a zip-lock bag and roll with a rolling pin. Mix sugar with crushed cookies. Melt butter and add it to the cookie mixture. Press mixture into an empty pie pan and bake for 10 min. Let cool completely.
Heat milk, marshmallows and chocolate in 3-quart saucepan over low heat, stirring constantly, until chocolate and marshmallows are melted and blended. Refrigerate about 20 minutes, stirring occasionally until mixture mounds slightly when dropped from a spoon.
Beat whipping cream in chilled medium bowl with electric mixer on high speed until soft peaks form. Beat in softened cream cheese until blended. Fold chocolate mixture into cream mixture. Pour into pie shell. Refrigerate uncovered until set (about an hour). Garnish with whipped cream if desired. Immediately refrigerate any remaining pie after serving.
