
(The white section was mine, since I don't really like sauce nor do I eat much meat!)
I found this recipe in a cookbook, and everyone who has tasted it says it is the best lasagna they’ve ever tried! I think it is the mixture of beef and sausage in the sauce, and the secret layer of provolone cheese! This was also my first-ever attempt at lasagna, so I was quite pleased.
1 pound ground beef
¾ pound bulk pork sausage
3 8oz cans tomato sauce
2 6oz cans tomato paste
2 garlic cloves, minced
2 teaspoons sugar
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
3 eggs
3 tablespoons minced fresh parsley
3 cups (24oz) small-curd cottage cheese
1 carton (8oz) ricotta cheese
½ cup grated parmesan cheese
9 lasagna noodles, cooked and drained
3 cups (12oz) shredded mozzarella cheese
In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Add the tomato sauce, tomato paste, garlic, sugar, seasoning, salt, and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for one hour, stirring occasionally. In a large bowl, combine eggs and parsley. Stir in cottage cheese, ricotta, and parmesan. Spread one cup of meat sauce in an ungreased 9x13” baking dish. Layer with 3 noodles, provolone cheese, 2 cups cottage cheese mixture, 1 cup mozzarella, 3 noodles, 2 cups meat sauce, remaining cottage cheese mixture and 1 cup mozzarella. Top with remaining noodles, meat sauce, and mozzarella (dish will be very full).
Cover and bake at 375° for 50 min. Uncover, bake 20 min longer or until heated through. Let stand for 15 min before cutting. Makes about 12 servings.
