I love this recipe because it is so easy and there are so many different variations.

Basic ingredients:
4 large flour tortillas
½ lb grated cheese (mild or sharp cheddar)
Potential fillings:
Black beans, canned
Chopped tomatoes
Diced green onions
Cooked, shredded chicken
Corn, canned
Chopped cilantro
Fajita seasoning
Preheat oven to 350°. Spray pie plate with non-stick cooking spray. Mix chosen filling ingredients together in a bowl. Place one tortilla on the bottom of the pie plate. Sprinkle some shredded cheese over the tortilla. Spoon a third of the filling on top of the cheese and top with a second tortilla. Repeat until all tortillas have been used. Spray top tortilla with non-stick cooking spray, cover with aluminum foil, and bake for 30 min. Remove foil and bake for an additional 10 min or until top tortilla is lightly browned. Remove from oven and let cool for 10 minutes before serving. Cut into quarters. Serves 4.
